Hey all! Hope your weekends are wrapping up beautifully. Gorgeous sunset here! Well, “unlucky” 13th proved to be anything but. Lovely day, stuck to plan, kept the cost down under $1 again, so all is well in my world.

Menu for Today:

Breakfast – coffee, two eggs
Cost = .23

Lunch – Corned Beef Hash with a side of peas. Really good.
Cost = .10

Daytime Snack – Watermelon jello with fruit cocktail!
Cost = .15

Dinner – Another pasta salad! Made with 2 ounces whole wheat pasta, one can pinto beans, two tbsp olive oil, splash of balsamic vinegar, some leftover carrots (about ¼ cup) from yesterday, and topped with some parmesan cheese. (had a LOAD of leftovers for tomorrow, should work great.)
Cost (two cans at .05 each, plus oil & light spices) = .15

Nighttime (blogging) snack – Dagoba, baby!
Cost: .15
Total cost of food for today: $0.78.

I’ve been receiving some fantastic feedback, with ideas & suggestions for future “challenges”. Very popular idea is to go all organic, lots of gardened produce, next to no preservatives & see how low we can go for cost! Another person wants to see how low we could go with a vegetarian diet – great stuff! Would love to hear from you! What type of challenge would YOU like to see in upcoming months? And it doesn’t have to be about food – how about getting your kids’ wardrobes ready in time for the summer months? How about a frugal vacation? What’s going on in your life where you’d like to save some cash?
