Yup, it’s Monday. Enough said. Had a fantastic weekend tho! Hope you did too.

Well, we’ve got another weigh in tomorrow, so sticking to plan (financially AND literally) are priority #1. Yeah, yeah, I realize losing weight was never the priority, but let’s face it, even deeper than my thoroughbred frugalista tendencies are my CHICK tendencies. When I found that I lost weight after Week One, it became an addictive feeling to see that scale creeping ever lower AND saving some serious money at the same time.

I have heard from SO many people who spent months on weight loss plans that required $15/week just for the “pleasure” of stepping on the scale, much less the cost of food! SHEAH! How about Evelyn, who spent $100/week for an eating plan where she HATED the food! Double SHEAH! (In my thinking, for that kind of cash, it better taste like the head chef at The Four Seasons made it for you!)

Okay, back to happy talk. Which in my case, involves jello. Gang, whether you’re thinking of following a frugalista-ish diet or not in the near future, do yourself a favor. Go out and get some jello. Serious summer soul food.

Menu for Today:
Breakfast – coffee, two eggs
Cost = .23

Lunch – More Chef Boyardee. Easy stuff, which works especially well for a Monday.
Cost = .05

Daytime Snack – Lemon jello with fruit cocktail (only using half a can of fruit with these jello molds from now on, BTW – stretching the fruit inventory nicely!)
Cost = .13

Dinner – Leftover pasta salad from yesterday. Really good stuff.
Cost = $0.0 (counted the entire cost yesterday)

Nighttime (blogging) snack – chocolate. And whenever I can manage one “leftover” (a.k.a. “free”) meal into a menu, I can splurge & do the 0.25 Scharffen Berger bar, rather than the 0.15 Dagoba bar. I’m Scarffen tonight baby!

Total cost of food for today: $0.66.
